Instructions:

  1. Brown the Beef:
    Begin by heating the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Toss the beef cubes in flour to coat them lightly. Once the oil is hot, add the beef in batches, browning it on all sides. Don't overcrowd the pot; you want the beef to sear properly. After each batch, remove the beef from the pot and set it aside.

  2. Sauté the Vegetables:
    In the same pot, add a little more olive oil if needed and sauté the chopped onion and garlic until softened, about 3-4 minutes. Add the carrots, potatoes, and celery, and cook for another 2 minutes, stirring occasionally.

  3. Deglaze the Pot:
    Pour in the red wine (if using), scraping up any brown bits from the bottom of the pot with a wooden spoon. This step adds incredible flavor to the stew, so don't skip it! Let the wine simmer for about 2 minutes to reduce slightly.

  4. Add Broth and Seasonings:
    Return the beef to the pot, then pour in the beef broth. Add the thyme, bay leaves, Worcestershire sauce, and season with salt and pepper. Stir everything together to combine.

  5. Simmer and Cook:
    Bring the stew to a boil, then reduce the heat to low and cover the pot. Let it simmer gently for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through. Stir occasionally and check the seasoning, adjusting with salt and pepper as needed.

  6. Finish and Serve:
