Instructions:

  1. Prepare the base: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 5 minutes.

  2. Cook the tomatoes: Add the chopped tomatoes to the pot, along with the dried oregano and sugar. Stir well and cook for about 10 minutes, allowing the tomatoes to break down and release their juices.

  3. Add the broth: Pour in the vegetable broth, stirring to combine. Bring the mixture to a simmer and let it cook for an additional 20 minutes. The tomatoes should be soft and the flavors well melded together.

  4. Blend the soup: Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender. Once blended, return the soup to the pot.

  5. Finish with cream and basil: Stir in the heavy cream, if using, to create a creamy, velvety texture. Add the chopped basil and season with salt and pepper to taste. Let the soup simmer for another 5 minutes, allowing the flavors to meld.

  6. Serve: Ladle the soup into bowls, garnish with additional basil leaves if desired, and serve with a slice of crusty bread on the side.
